Radyvyliv cabbage rolls with pancakes have been added to the list of intangible cultural heritage of Ukraine, as reported by the Rivne Regional Military Administration.

Radyvyliv cabbage rolls with pancakes were recognized as a cultural heritage of Ukrainians and included in the list of intangible cultural heritage of Ukraine. The recognition of the culinary dishes of the Rivne region was reported in the local regional military administration, UNN reports.

At the end of the year, we had another achievement in the Rivne Region to Taste to Taste" project. So Kirovohrad's "Holubtsi" has been supplemented with a traditional dish from Rivne region - "Stuffed cabbage rolls with pancakes". We not only preserve our traditions, but also, together with other regions, we are creating a unique gastronomic heritage of Ukraine. We are grateful to to the Ministry and its current head, Rostyslav Karandiev, for their support. support.

The Ministry of Culture and Information Policy of Ukraine has decided to extend the list of Elements of Intangible Cultural Heritage "Preparation of the Ukrainian traditional dish "Stuffed cabbage rolls" with dishes from different regions of Ukraine.

So, along with stuffed cabbage rolls from Kirovohrad region, now another item from the Rivne region is now in demand  . "Stuffed cabbage rolls with pancakes" or "Radyvyliv-style rolls".

The local UWA noted that their cabbage rolls with pancakes are an indispensable attribute of local cuisine, a part of the ritual, and and the housewives who know how to cook them are especially respected.

The dish was prepared both on weekdays and holidays. It was also served at weddings, christenings, for a memorial dinner, during family and and religious holidays.

It is noted that the recipe for cabbage rolls belongs to a woman who, in her younger years, was a servant of wealthy people who lived in the village of Pereniatyn (formerly the trading town of Pereniatyn), and brought it to her family. At that time, cabbage rolls with pancakes were cooked only on major holidays: Easter, Christmas, the Feast of the Temple, and birthdays.

The Rivne UWA also shared a recipe for a miracle dish:

Pork, chicken, or turkey meat is used for the minced meat. Pancakes are made with both milk and eggs. milk and eggs, or with water. They are also made from buckwheat flour, not not sweet, but salted. Nowadays, beet juice and ground herbs are added to the dough, which gives them a special color. A head of cabbage is chosen with green, thin leaves without thick veins. Next, a pancake is placed on the leaf, then the minced meat is placed on it and tightly rolled up. At the bottom of the earthenware or potato slices and cabbage leaves are laid out in layers on the bottom of the pottery or cast iron with pork fat. They are then covered with salted water. Once upon a time, they used to cook cabbage rolls in the oven, nowadays they are baked in the oven, stewed in a frying pan or in a saucepan. They were served with with sour cream and herbs or fried cracklings. Nowadays, every housewife makes stuffed cabbage rolls in her own way, adding tomato, cream, mushroom, spicy, or cheese sauce. However, tomato and sour cream sauce is the most popular. These cabbage rolls are are tasty and juicy.
