“Roskachestvo is preparing a state standard for shawarma, which is expected to be introduced in 2025. The inspection showed that 27 out of 29 shawarma samples violated sanitary standards.
The GOST for shawarma in 2025 was announced by the head of Roskachestvo, Maxim Protasov. According to him, the first version of the GOST is ready. New inspections of public catering will be timed to coincide with the adoption of the standard. This was reported by the Dozhd TV channel, UNN reports .

It is noted that the first mass inspection already took place in April this year, when, according to Protasov, 27 of the 29 seized samples of shawarma were prepared in violation of sanitary and epidemiological standards.
Retail specialist Mikhail Lachugin notes that there is nothing to stop street cafes from circumventing GOST by slightly changing the shawarma recipe or changing the name.
According to the Dozhd TV channel, in 2023, former presidential candidate Vladislav Davankov proposed to develop a shawarma standard. At the time, he insisted that all harmful ingredients should be removed from the shawarma and all the healthy ones should be left.
