MHP's Sensory Analysis Laboratory was accepted into the European Sensory Analysis Network (ESN).
The sensory analysis laboratory of the MHP Culinary Center has successfully passed the procedure for joining the European Sensory Analysis Network (ESN). Thus, MHP's testing laboratory, which has no analogues in Ukraine, has been granted membership in the community that creates ISO standards in the field of sensory analysis, UNN writes.
This international recognition of expertise opens up the possibility of participating in joint research on the preferences of domestic and foreign food markets, as well as access to exclusive information from the primary source in the field of sensory analysis
The Sensory Analysis Laboratory (SAL) of MHP's Culinary Center conducts consumer and expert tastings, as well as marketing research on consumer preferences, so its operations are integrated into the process of developing new food products. The laboratory allows us to study products in terms of organoleptic properties and shelf life.
Consumer tastings conducted in the LCA are based on focus groups and are mainly aimed at marketing research, while expert tastings are designed to solve more complex problems, in particular, to accurately describe and identify differences in the organoleptic characteristics of new culinary products being tested to determine the shelf life of freshness and changes in the product's attractiveness during storage.
Recruiters select focus groups of 15 people for consumer tastings that meet the requirements for the target consumer of the product under study. In contrast, expert tastings involve only certified experts who have been selected based on the results of testing their own sensory systems, undergo special training, and are periodically validated to ensure that the expert panel is productive and compliant with all ISO standards in the field of sensory analysis
The taster's workplace in the LSA consists of a cabin isolated from external stimuli, with a developed system of signal lights for silent communication with staff, special lighting with the required color temperature, a tabletop made of chemically resistant material with a built-in sink with water supply, and a window with penetrating lighting built into the table surface.
The Laboratory's operational activities are supported by special RedJade software. It is used to generate reports for customers, analyze the results, static processing, analyze the work of tasters, and store a database of experts. This software also makes it possible to join the ESN's common database of respondents, which is very important for participating in joint projects with the European partners of this network.
